The Rise of Savoury Cocktails

We’re not claiming to be mixologists (though we’ve spent plenty of time around them), but with so many people asking why savoury cocktails are suddenly everywhere, we thought we’d share what we’re seeing.

Why Savoury, Why Now?

There’s a natural evolution in taste. People often start with sweet, fruity drinks, but over time and with age, they tend to gravitate toward deeper, more complex flavours like umami, salt, acid, and spice.

That’s exactly where we are. Classics like the Dirty Martini and, of course, the Bloody Mary are back in a big way. But this isn’t just a revival, it’s a full-on reinvention.

Bartenders are treating drinks more like dishes, building flavour with intention. Think umami, acidity, spice, all working and coming together. It’s the kind of balance that makes you go back for another sip… and then another.

What’s Actually in a Savoury Cocktail?

It’s all about layers.

A proper savoury cocktail isn’t just salty, it’s structured. You’ve got richness, brightness, spice, and depth all playing a role. And when it comes to Bloody Marys, that balance becomes even more essential.

That’s why we’ve put so much focus into getting ours just right. A bold, perfectly spiced blend that’s savoury enough to feel substantial, and of course, our homemade pickle juice adds a deep umami richness without the need for a dozen extra additives.

If you want to go all out with garnishes, we won’t stop you.

Why Everyone’s Ordering Them?

Going out (or even staying in) has become more intentional. People want drinks that feel like an experience, something a bit different from the usual conventional marg or vodka soda.

Savoury cocktails deliver on that. They’re unexpected, they’re satisfying, and they often feel like a drink and a snack all in one.

And the Bloody Mary? It’s leading the charge. There’s something about a drink that actually tastes like something real, the tomatoes, spice, a bit of tang, just hits differently.

More Than a Trend

Savoury cocktails aren’t going anywhere.

They reflect a bigger shift toward drinks that feel intentional, balanced, and genuinely enjoyable, not just sweet for the sake of it.

And while there’s plenty to explore in this space, we’ll always have a soft spot for the one that does it all: the Bloody Mary. Bold, savoury, and endlessly customisable, and the perfect place to start.
